After monitoring for some time, the latency hasn't returned. I will go ahead and close this incident.

UniFi detected that between 08:00 BST and 08:05 BST, there was high latency with the ISP (Virgin Media) resulting in slow requests. Requests stablished after the 5 minute period but no known issues.
